Everyone loves a mac and cheese. And judging by my video views, everyone loves chorizo. So the crossover was inevitable and was a smash hit, with over 1.3 million views! Chorizo has a strong flavour so there’s not too much else you need to flavour it with.
Ingredients
- 300g macaroni
- 50g unsalted butter
- 50g flour
- 500ml full-fat milk
- 1 tbsp wholegrain mustard
- 150g cheddar cheese, grated
- 150g mozzarella cheese, grated
- 120g chorizo, diced
- 50g crispy fried onions
Directions
Preheat the oven to 200c / 180c Fan
- Bring a large pot of salted water to the boil and add the macaroni, cooking to the packet instructions, usually between 10-12 minutes.
- In another pan, on a medium-high heat, melt the butter and then slowly add the flour while stirring constantly to form a paste (roux)
- Turn the heat down to medium and add the milk slowly and stir constantly until the paste becomes more of a sauce. Don’t worry if it becomes lumpy, use a whisk or stir vigorously to beat the lumps out
- Add the mustard, some black pepper and the grated cheddar and mozzarella and stir through
- In a frying pan without oil, fry the chorizo for 3 minutes, or until the the juices start to run out of the chorizo chunks
- Add the macaroni, chorizo and crispy fried onions to the sauce and stir through
- Serve with some more onions on top
